Check for gravel caught between the disc or caliper and backing plate, I get this regularly with mine, worse than any other car I've owned.

I've run 16" with offset 38 for the last two winters and absolutely no problems.
Shod with Dunlop SP Winter Sport 4D which are excellent and very quiet. DCC set to sport works nicely.
Don't forget to tell your insurance company, as with me there should be no problem and no extra cost.

I'm not absolutely sure but these hooks look like the ones at the back of the rear seat squab.
The squab comes out by lifting the front edge then pulling upwards and forward once the seat is loose at the front, pull hard as its quite stiff.

I find luke warm water does work but will occasionaly flash freeze again (making it worse), if you don't immediately put your heaters and wipers on after applying it. Having split much less than a litre of milk in my old car, I would strongly advise you carry on looking for info to remove the rear seats and very other affected part that's removable, in order to clean. Bicarbonate of soda does help, but it's no cure all, and the stink that old milk leaves behind ...

A 10 litre watering can full of luke warm water has worked for me for +50 years and never any cracked glass, even at minus 15.
Poured as slowly as possible over windscreen so the glass heats up a bit, that way it doesn't re-freeze when you move off.

Which ever way VW try to explain it, it's a thoroughly bad, thoughtless and confusing feature to inflict on such an otherwise brilliant car. Best work around I've found is to use lights on manual. It does sound worrying if you've never scraped paint off glass before but I've done it loads of times, glass is harder than steel and won't leave a mark if everything is clean. Just don't cut yourself! :)
