On my non GT 1.4 TSI, how do I :-

Set auto lock
Turn of DLRs
lower mirrors when reversing

as I don't have a MF Steering wheel, do I need VagCom, whatever it is, or find a friendly local Roc owner who has it, or can I buy it?

For the first 2 you need vagcom/vcds as you don't have the highline computer (like me)
to get the reverse mirror down, from what has been established through previous investigation (there is a lovely long thread discussing it somewhere) it seems you need the electric folding mirror option
