Coolant problem?

Hi all,
Wonder if anyone could shed some light on the below for me -

VW replaced the coolant and apparently flushed the system through when I bought the car 8 months ago.

Over time the colour has gone back to a light brown tone (doesn't look like it's been contaminated with oil).

I know you shouldn’t take the cap off when it’s hot but I did carefully and the fluid seemed to be bubbling is this normal?

I haven’t had to top the fluid up until today but it's now on minimum (Is G12 ok?). I do have a slight drip on the under tray which I think might be coming from the coolant. Could this be related?

I have spoken to my local garage and he said it’s not uncommon for the coolant bottle to discolour overtime.

Started to suspect water pump or worst case gasket but currently no power loss or white smoke coming out the back?

Would be grateful if anyone can help me out.
