I think you have to give the garage an opportunity to right any faults prior to rejecting the car.

Within the 30 day period, as per the consumer rights act, you don't have to give anyone anytime to rectify faults - if any product is found to be faulty within the 30 days you have the right for a full refund.
You do have to allow them to evaluate any reported faults though, i.e. give the car back for them to examine - so long as they admit there is even 1 fault they have to refund you.

You need to 'reject' the car and return it to them, i.e. stop using it. Take it back, leave it with them, list the reported faults and state you want a refund under the consumer rights act 2015.
Do this within the 30 day period. Check here for more info:

Good luck mate. I'm hopefully buying a 2012 model tomorrow 99,000 miles on clock but with a years warranty. Hopefully I'm not in this situation, looks very time consuming and frustrating!

Just be aware that the issues you've highlighted with the car are not MOT failures. Advisories on MOTs come down to the particular tester and how picky they are. I've had advisories on MOTs and done nothing and got no advisories from the same garage one year later.
An MOT just says your car is roadworthy on the test date but is no guarantee of the quality of the car.
So I'm not so sure the dodgy MOTs is the correct route to pursue.

Call the police / drop into your local station and report them - it is illegal to hold property for the payment of something else, it is theft....the demand for payment is a civil matter, holding the car is a criminal offence - the law is clear on this and I have had to point this out to someone once before.
The matter has now deteriorated to an untenable position. Your next course of action is to pursue a complaint with trading standards, and look into claiming through the small claims court to claim all your money back plus compensation.
