MISSION COMPLETE... I hope..
The cars back together and running alright. I was very nervy all morning.. I was excited shitting myself.
So I unplugged the ignition coils and cranked it over a few times to let the oil circulate then plugged them in and after a few extra turns it fired up. A slight rocker ticking sound then it went away once they settled. It idles fine and I had esp light and steering light on dash but esp went once I moved the car (must have been because it had not moved in 2 months) and steering light when off once I did a steering reset method.
I just drove it around the block for about 30 mins and it all seems fine tho I've not pushed it over 40 yet. I'm happy so far!!!

Thank you it's been a long 3 months getting this back on the road.
I do plan on updating this at some point with a price breakdown and tools I had to get..
My best tip is this website

Free diagrams of the car and all part numbers so you can call vw and look online for oem.
As for stuff I'd do differently next time it's definitely the engine crane set up. It wasn't fun trying to put it back in as both mounts are on the opposite side to the heavy turbo so it was constantly leaning and a right pain.
Then there was cleaning the old head gasket off... Its difficult to be rough enough to get it off and at the same time not lose bits of crap down the oil passages on the block.
And my best decision was to send the head off to a engine shop to get someone else to do the valves properly and machine seat them. I don't know why anyone would try do it using the manual grinding paste way when the factory wouldn't do it like that. At least I know that they pressure tested it and hot washed it so I get a decoking of the valves at the same time.

On and off I put about 30 miles on it today. It's running better than ever. No errors no shakes nothing. I'm really happy and I would recommend getting a carbon clean to anyone as the clean valves has made so much difference to the car. I had to check the car was running when i stopped in traffic as there was no rough idle anymore at all.
