Contemplating getting my 2016 R a stage one remap - Im not techie and I've read a lot of different things... most I've googled suggest a tuned bhp around 310/315 and 320/330 ft/lb
Celtic Tuning seem to suggest they go to 364bhp & 364 ft/lb which seems excessive...
anyone had any positive/negative experiences? anything I should look out for?
(or any links to threads already on here that I havent found?)

Had my 2012 tdi remapped by Celtic Tuning (140bhp to approx 195bhp) and no issues at all

Same here. 2.0 TDI R-Line safely done by Yorkshire remaps with no problems at all.
Excellent gains.

Tuned BHP - 195
+30% BHP Increase
Standard Torque - 320
Tuned Torque - 410
+28% Torque Increase

Roughly whats the cost for a Stage1 remap? Does it also improve mpg or is that a stupid question lol

I paid just under £300
The type of remap will dictate whether or not you improve your mpg

I have a R-Line 2.0 TDI after remap on long run I’ve gained a bit. Around 68-70mpg before remap on long run 60-62mpg.

Found a local service offering a performance remap taking me from 280 to 340 bhp and from 350 to 470 nm torque, with a 5% fuel consumption improvement... charging £200, reviews look positive and they have been very responsive with communication which is always a good sign..
My main concern with the claims of big performance improvement at stage 1 is whether it’s going to remain stable on standard equipment, or whether to ‘play it safe’ and take a smaller, more controllable boost at stage 1 and then think about upgrading equipment if I wanted to take it any further...
Follow up question if anyone has any experience... read a bit about getting a carbon clean - worth it? Or is it a bit of snake oil and an (Reasonably) expensive luxury?

Afterwards I found a vid on YouTube with before and after pics. Guess what, no cleaner inside.
Use use the highest quality oil & fuel you can afford and use additives from Millers or such like.
