Looking to buy a Scirocco R and have some questions. AWD, Manual, DSG, VR6

I have my eyes on a few different Scirocco options in LHD, 2010 to 2011 approximately.
I am looking at doing a dream car build...
I know $$$$
I have seen a few AWD converted MK3 Sciroccos with DSG gearboxes.
My wife and I both prefer to drive a manual transmission car.
It will be a daily -ish driver with some track time as well.
Do I bother getting the converted AWD with DSG?
Do I swap in a manual 6spd gearbox in the AWD swapped car?
Or Do I by a manual car and swap in the AWD (with manual gearbox)?
Or go all in, buy the Scirocco I really want and swap in AWD with a VR6?
None of these options is cost effective, I am fully aware.
