Digital second speed display just ——— won’t show speed
The digital second speed display in the middle box on the digital dashboard won’t show easy speeed when driving it just shows ——— can’t find a way to get to to show a speed when driving along

Sounds to me as if you're viewing the speed warning setting which will display "- - -" if it is not set to a value. You set it to a specific speed and once you exceed that speed a warning chime will notify you. More details on function and setting can be found in user manual.
Not sure what year of Scirocco you have but most display the speed digitally only in KM/H in small numbers unless they are set to "Rest of World" using VCDS and display the "Big Digital Speedo"
