Can you put 225s on stock 18s? Would there be any major pros or cons in doing so?

You can no problem, but I have always believed not to go for a narrower tyre than what the car came with..

Rolling radius will be 4mm less, which is not a big issue bearing in mind it changes by 6.4mm between a new tyre and a tyre at the legal limit.
There may be insurance implications, as in their eyes, you are modifying the car from "standard".

might help with road noise, reduce grip, oh and invalidate your insurance.

In theory then any other make of tires would invalidate warranty, as its not as the car came from factory. Ill ring them now to declare I have removed the scirocco badge on the back

No problem using 225/45, infact it is an OEM size for the Scirocco
