I hate it when you want to put your foot down a bit to get up a hill or something but it hesitates then decides to drop 2 gears instead and you splurge forward at like 6k rpm in 2nd

Yes - I find DSG is not so perfect on hills, seems to change down to too low a gear, so an override is called for. Taking off on a hill also seems to hold 1st for too long, so again override called for to avoid high (unnecessary) rpm.
